The Wine of St Jean! It is made from the still gelatinous green walnuts of early summer. These are macerated with walnut leaves in alcohol for 1 year and then mixed with red Cahors wine, spices and sugar. It's an alcohol to share! It can be enjoyed as an aperitif with melon for example but can also be used to deglaze. Preferably keep cool.
